Lemon Poppyseed Muffins
This one's for Mum, and anyone else who fancies making Lemon Poppyseed muffins - they are delicious and take about 5 minutes to make; they're a kindy staple in our house!
- 2 cups Self Raising Flour
- 1 cup white sugar
- 1/2 cup poppyseeds
- finely grated rind of 2 lemons
- 100g butter, melted
- 1 cup milk
- 2 large eggs
Topping
- juice of 2 lemons
- 1/4 cup white sugar
Preheat oven to 200c. Mix the first 4 ingredients in a large bowl. In a second bowl mix the melted butter, milk and eggs. Tip the liquid ingredients into the dry ingredients and lightly fold together until flour is dampened - do not overmix. Spoon into well-greased muffin tins and bake for 10-15 minutes ( i find they do need 15 minutes but that may be just my oven). While the muffins cook, mix the lemon juice and the second measure of sugar ( do not dissolve the sugar). As soon as the muffins have been removed from the tins, brush them with lemon sugar topping and cool on a wire rack.

Raspberry Suprise Muffins
- 50g butter, melted
- 3/4 cup milk
- 2 eggs
- 1 3/4 cups plain flour
- 1/2 cup white sugar
- 3 tsps baking powder
- 2 tsps cinnamon
- white chocolate ***
- 1 cup raspberries
Mix butter, milk and eggs together in a bowl. Add flour, baking powder and cinnamon. Mix in white chocolate and raspberries - mixture does not have to be smooth. Bake for 15-18 minutes at 200c. Leave in tray for 5 minutes before lifting onto a wire rack. Dust with icing sugar
*** I have no idea how much chocolate the recipe calls for; i usually just bung in as much as i can :)
